A bowl of hot, hearty homemade soup is an ideal meal on a chilly day. Soup is economical, and especially when it is homemade, it can be loaded with healthful, fresh items such as vitamin-packed vegetables, lean meats and whole grains or legumes. Soup controls hunger without many calories, making it a perfect diet food. It is versatile, stores well and is convenient. When homemade soup is presented in a jar, it can even become a thoughtful, healthy gift.
Layer the first five soup ingredients in the mason jar. Place them in the order listed.
Layer the seasonings, bouillon and small pasta in the order listed. Layer them just around the edges of the jar, leaving the middle area of the jar empty.
Fill the remainder of the jar with elbow macaroni. Place the lid on the mason jar and seal tightly.
Attach a card with instructions, if giving as a gift.
Cook the soup by pouring the jar contents into 3 quarts of water. Add 2 cups each of chopped celery, carrots and tomatoes. Simmer, covered, over low heat for about one hour, until soup is hot.
