Parmesan cheese undergoes an extensive aging process to develop its rare flavor described as being akin to savory. The Japanese call Parmesan cheese's flavor "umami," but as Parmesan cheese sits in storage in a refrigerator, it dries out and this sought-after umami taste deteriorates after a month. Softening your dried out Parmesan cheese can make it easier to grate and taste better. As with the making of the cheese itself, softening dried out Parmesan cheese will take time. Plan at least one day before you need your cheese to use this remedy.
Remove the original wrapper from the Parmesan cheese.
Lightly dampen a paper towel. Wring out excess moisture.
Wrap the paper towel around the whole piece of Parmesan.
Hold the paper towel in place by wrapping aluminum foil around the paper towel.
Place the wrapped cheese in the refrigerator for one to two days to restore moisture to the cheese.
