Egg-less, Easy Gingerbread Men Recipe
Melt 1 cup butter, 1 cup brown sugar, and 1 cup dark corn syrup together in a large pan. Into the pan, sift 4 cups flour, 1 tsp. cardamon, 1 tsp. cloves, 1/2 tsp. allspice, 1 tsp. cinnamon, and 1 tsp. ginger. Stir in 1 Tbsp. grated orange rind. Mix well, wrap in plastic and refrigerate for up to two weeks. Roll out dough on a floured surface, 1/2 inch thick. Cut with gingerbread boy cookie cutter and bake at 350 degrees for 12 to 15 minutes. Don't overbake these soft cookies.
Gingerbread Men Ornaments Recipe
Slowly melt over low heat, 1 cup dark molasses, 1/2 cup packed light brown sugar, and 1/2 cup granulated sugar. Add 1 tsp. baking soda and remove from heat. Cool for 10 minutes. Mix 2 sticks softened butter with the melted sugar mixture and 2 eggs. Mix in 6 cups flour, 2 tsp. cinnamon, and 1 tsp. ginger. Wrap dough in plastic wrap and refrigerate for at least 1 hour. Roll out 1/4-inch thick on a floured surface and cut with gingerbread men cookie cutters. Use a straw or toothpick to poke a hole in the top of the cookies. Bake at 325 degrees for 12 to 15 minutes. Cool and decorate. Thread a ribbon through the hole to hang on Christmas tree.
Crisp Gingerbread Men Recipe (Reference 2)
Mix 2 sticks softened butter with 3/4 cup packed brown sugar. Add 2 eggs and mix. Add 4 1/2 cups flour, 3 tsp. ginger, 1 1/2 tsp. baking soda, 3/4 tsp. baking powder, 1/2 tsp. cloves, and 1 tsp. salt. Mix well. Stir in 1 1/2 cups molasses. Wrap in plastic wrap and chill for at least 1 hour. Roll out 1/8 inch thick on a floured surface and cut with a cookie cutter. Bake at 375 degrees for 8 to 10 minutes. Decorate with frosting and candies.
