Apple muffins are a breakfast favorite, as is pumpkin bread. Combine the two main ingredients and you have a healthy way to start the morning, while fooling your little ones into eating their vegetables.
Turn on the oven and preheat it to 350 degrees F. Spray muffin tins with nonstick cooking spray. Set aside.
Beat butter and sugar until creamy. Add eggs, beat until well combined and fluffy. Add pumpkin, applesauce and vanilla and mix until blended.
Mix together all dry ingredients. Slowly add dry ingredients and apple juice to the pumpkin mixture, switching between the two until smooth. Fold in raisins.
Distribute batter into muffin cups, filling each about two-thirds of the way full. Bake about 20 minutes or until a knife that's inserted comes out clean. Remove from oven and allow to cool in the pan before turning out onto a rack.
