Lemons go through three stages in their lifetime. In the immature stage, lemons appear green in color. Three to four months later, lemons mature and turn a vibrant yellow. This happens early to mid-summer and indicates the lemons are ready to be picked. Unpicked lemons then go into the old stage, where they over-ripen and become a faded yellow.
