Soothing pumpkin soup does not always have to follow a traditional western recipe served at Thanksgiving. Chinese pumpkin soup uses ingredients from the far East to create a satisfying meal with an exotic flavor. Look at international or Asian markets for specialty Chinese ingredients if your store does not carry them.
Combine all ingredients in a stock pot and heat over medium heat until warmed through.
Puree the soup in the blender in batches until smooth.
Serve the warm soup in individual bowls, optionally garnished with sliced green onions.
