Amaranth, from the Amaranthaceae family, produces vibrant flowers and edible seeds, leaves and stems. Though sometimes considered a weed, many amaranth varieties are regularly sold for landscaping and food production. Amaranth seeds are readily available through local and online seed companies while starter plants are often found at garden shows and local nurseries.
