Cut sprouted potato into egg-sized pieces, with each piece containing one or more "eyes" or sprouts. Dry 24 hours. Plant in a trench 3 to 4 inches deep, with the "eyes" facing up. Cover with soil and water regularly. When plant reaches 6 to 8 inches, bury all but the topmost leaves and repeat at least once as plant grows.
