Petticoat Tails

 

2 1/2 cups flour
1/2 tsp. baking soda
1/4 tsp. salt
1 1/2 cups soft butter
1 1/2 cups sifted confectioners' sugar
1 tsp. vanilla extract or rose water

Sift the flour, soda and salt. In large bowl beat butter, sugar and vanilla until light and fluffy. Add flour mixture, mix well with hands to make a soft dough. Chill for 30 minutes. Turn out dough onto lightly floured surface. Divide in half and shape into a 8 inch long roll. Wrap and chill for several hours or overnight. Preheat oven to 375 degrees. With sharp knife cut into 1/8 thick slices. Place slices 1 inch apart on ungreased cookie sheets. Bake 8-10 minutes until lightly browned. Let stand 1 minute. Remove to rack and cool. Makes about 7 dozen.
