Sweet Potato & Peanut Butter Casserole


One might not think of sweet potatoes and peanut butter being compatible in the same dish, but the combination makes a tasty side dish or dessert treat for any meal. Sweet potato and peanut butter casserole is a way to use up left-over baked sweet potatoes, or you can simply cook the potatoes ahead of time to make the dish.

Step 1

Scoop the sweet potato from the skins into a large bowl using a spoon. Mash the potatoes with a potato masher until smooth.

Step 2

Add the milk and stir until the sweet potato mixture is creamy.

Step 3

Combine the peanut butter, honey, vanilla and salt in a small bowl. Whisk until smooth.

Step 4

Spray an 8- by 8-inch baking dish with non-stick spray.

Step 5

Pour the peanut butter mixture into the baking dish. Tilt the pan to coat the bottom thoroughly with the mixture. Top with the sweet potato mixture.

Step 6

Bake in a 350-degree Fahrenheit oven for 35 to 40 minutes. Allow to cool before serving.
