Summer brings about family barbecues and outings at the park. Various salad recipes are prepared and shared with loved ones. This summer why not try something a little different. Use some freshly picked apples to make a taffy apple salad. This salad is both crunchy and sweet, and sure to please both the young and the young at heart. You can prepare this salad a few hours ahead, or the night before.
Place 1 tbsp. of flour, 1/2 cup of sugar, 1/4 cup of brown sugar, 1 egg yolk, 1 1/2 tbsp. of apple cider vinegar and 2 oz. of pineapple juice in a medium pot.
Turn the heat to medium and cook until the ingredients begin to thicken. Make sure you stir the ingredients frequently.
Transfer your ingredients to a large metal bowl and set them in the refrigerator to cool off.
Wait 1 hour and remove the metal bowl. Add 6 oz. of crushed pineapples, 4 cups of diced apples, 1/2 cup of chopped peanuts, 1 cup marshmallows and 1 cup of whipped cream to the bowl.
Mix the ingredients together and serve. You can also cover the bowl with plastic wrap and set it in the refrigerator if you aren't quite ready to serve it.
