A strawberry apple feta salad is delicious on its own and easy to tinker with to fit your tastes. By changing the proportions, altering the dressing, adding additional berries, fruits or dried fruits, putting in herbs or even adding grains, you can change the flavor and feel of the salad, making it heavier or lighter, more savory or sweeter. Experiment to your heart's content; this salad is easy to experiment with and difficult to ruin.
Tear or dice 1 head of lettuce into bite-sized pieces. Use Bibb lettuce, romaine or any other type you enjoy. Put it in a large salad bowl.
Slice up 1 apple and add it to the salad. Alternately, add 3 ounces of dried apples instead of one fresh one.
Slice 1 1/2 cup of strawberries up and add them to the bowl.
Grill a breast of chicken. Slice it into bite-sized pieces and allow it to cool. Add it to the salad. If you prefer a lighter appetizer salad, skip this step.
Add 1/4 cup of dried pine nuts to the bowl along with 1/2 cup of crumpled feta cheese. Toss the salad to mix the ingredients and drizzle raspberry vinaigrette or some other dressing of your choice over it.
