Crisp and sweet, this salad brings out the best in all of its ingredients. Make carrot, raisin and apple salad up to 24 hours ahead of time. Wash, peel and coarsely grate the carrots into a bowl.
Wash, core and cut the apples into bite-sized pieces with a paring knife. Some cooks peel the apples; others do not. Add the apples to the carrots, and sprinkle them with lemon juice.
Stir in the raisins and mayonnaise. Chill the salad before serving.
