Carrot Raisin Apple Salad With Mayo


A mother who wanted her children to eat more vegetables and fruit may have created this combination of carrots, apples and raisins, but it appeals to adult tastes as well. Crisp and sweet, this salad brings out the best in all of its ingredients. Make carrot, raisin and apple salad up to 24 hours ahead of time. Store it refrigerated and add the mayonnaise just before serving. The basic ingredients are used in many recipes; feel free to add your own touches to this old-fashioned favorite.

Step 1

Wash, peel and coarsely grate the carrots into a bowl.

Step 2

Wash, core and cut the apples into bite-sized pieces with a paring knife. Some cooks peel the apples; others do not. Add the apples to the carrots, and sprinkle them with lemon juice.

Step 3

Stir in the raisins and mayonnaise. Chill the salad before serving.
