Cabbage, Carrot and Apple Salad


This tangy and sweet apple salad provides a creative twist to conventional coleslaw. Made with juices and olive oil instead of mayonnaise, it can safely be used for any potluck or barbecue. This creative salad originated in Hungary and was brought to America by Louis Szathmary.

Step 1

Combine the apple juice, lemon juice, olive oil and caraway seed in a bowl and whisk until completely blended. Season with salt and pepper to taste.

Step 2

Combine the cabbage, carrots and Granny Mmith apple in a salad bowl and pour the dressing on top.

Step 3

Toss the salad with tossing utensils and leave at room temperature for 40 minutes, or until the cabbage is wilted. Toss occasionally to encourage blending.

  • 3 tbsp. apple juice
  • 2 tbsp. fresh lemon juice
  • 1 tbsp. extra virgin olive oil
  • 1/2 tsp. crushed caraway seed
  • Small bowl

  • 1/2 head savoy cabbage, thinly sliced and cored
  • 2 large carrots, thinly julienned
  • 1 Granny Smith apple, cored, quartered and sliced to 1/8-inch thick crosswise pieces
