Sweet Potato Baked Wedges

Overview

Savor your garden-fresh sweet potatoes in more recipes than just a marshmallow-topped casserole. Baked sweet potato wedges are a healthy, colorful treat with a slightly sweet flavor and less fat than french fries. Change the spices as you see fit to customize the flavor of your sweet potato wedges. This recipe serves six to eight.

Step 1

Heat the oven to 400 degrees Fahrenheit, and spray a baking sheet with cooking spray.

Step 2

Slice each of the sweet potatoes in half lengthwise.

Step 3

Cut the sweet potato halves in half, width-wise if they measure longer than 6 inches.

Step 4

Place each half of the sweet potato cut side down and slice into three equal wedges. Repeat with the remaining potato halves.

Step 5

Toss the wedges with the extra-virgin olive oil, salt and optional spices in a bowl.

Step 6

Scatter the potato wedges on a baking sheet, and roast for 20 to 25 minutes at 400 degrees or until tender all the way through and golden brown.

  • 3 sweet potatoes, scrubbed
  • Paring knife
  • 2 tbsp. extra-virgin olive oil
  • 2 tsp. salt
  • 2 tsp. spices or herbs (cinnamon, rosemary, pepper flakes or garlic powder) (optional)
