Baked Sweet Potato Skins


Seventy-five percent of the vitamin content of sweet potatoes is in the skin, yet most people peel the skins and only eat the sweet flesh inside. Enjoy the most nutrition value from your sweet potatoes and make a visually appealing treat with a zesty side dish with this creative recipe for baked sweet potato skins.

Step 1

Wash the sweet potatoes and rub the skin with olive oil, salt and pepper.

Step 2

Wrap the potatoes in tin foil and bake in a 400 degree F. oven for 45 minutes.

Step 3

Cut the sweet potatoes in half and scoop out as much of the flesh as possible with a spoon, being careful to not tear the skins.

Step 4

Place the flesh into a bowl with the buttermilk, paprika and nutmeg and mash until completely smooth.

Step 5

Spoon the filling back into the skins. Place the skins on a baking sheet and bake at 400 degrees for 15 minutes, or until the stuffing is lightly browned.

Step 6

Sprinkle with bacon, sour cream and green onions.
