Pumpkin and pear soup is made with fresh or canned pumpkin. Use some of the flesh from a pumpkin that you carved for Halloween to make a fresh pumpkin soup with pears. The soup has a smooth texture, and preparation time is about 30 minutes. The recipe makes six servings.
Wash and peel the pears. Slice the pears into thin slices. Finely chop the onion.
Cut the top of the pumpkin off. Use a knife to gather 2 cups of pumpkin flesh from the inside walls of the pumpkin, and mash with a potato masher. Canned pumpkin can be used instead, if you don't have a fresh pumpkin.
Place the butter in a frying pan. Add the onion and pears. Saute over medium heat, stirring constantly until the pears are tender and the onion appears translucent.
Blend the pumpkin and pear/onion mixture in a blender until the mixture is smooth. Place the blended mixture in a saucepan.
Add the salt, cinnamon stick, wine, water and broth to the mixture. Bring the mixture to a boil. Reduce the heat, and simmer uncovered for 20 minutes.
Remove the cinnamon stick after 20 minutes and add the cream. Stir the soup and heat thoroughly without letting the mixture boil. After the soup is hot, remove from heat and serve.
