Apple Cashew Salad


If you have recently harvested fresh gala apples from your yard or local orchard, you can use the apples to make several sweet recipes. For a healthy lunch or appetizer you can use your gala apples to make a simple apple and cashew salad. The saltiness of the cashews complements the sweetness of the gala apples, giving you a memorable small meal. Typical apple cashew recipes include the addition of celery instead of lettuce to create a traditional salad.

Step 1

Add 1/2 cup of powdered sugar and 1/2 cup of mayonnaise to a medium-sized bowl.

Step 2

Stir the powdered sugar and mayonnaise with a spoon until the mixture is blended well and smooth.

Step 3

Chop two gala apples and three celery stalks into small bite-sized pieces.

Step 4

Add chopped gala apples, celery and 1-1/2 cup of cashews to a large bowl. Add the powdered sugar and mayonnaise mixture to the large bowl as well.

Step 5

Toss the salad with salad tongs until all of the ingredients are well blended. Serve the salad immediately.
