Add 1 tbsp. of extra virgin olive oil into a large pot and cook on medium heat. Chop one yellow onion, two celery stalks and two carrots with a sharp knife.
Add 1/2 cup of chopped yellow onions, 1/4 cup of chopped carrots and 1/4 cup of chopped celery. Stir in 1 tbsp. of ground cinnamon into the mixture.
