Do not fry when you can prepare healthy baked French fries made from flavorful sweet potatoes. Adding rosemary to these baked sweet potato fries lends a savory flavor and fragrance to the dish. This simple dish lets the flavor of the sweet potatoes shine though, and can be served as a side dish alternative to French fries or potatoes with any meal.
Preheat the oven to 450 degrees Fahrenheit, and cut the sweet potato in half, lengthwise.
Place each half cut side down onto a cutting board, and slice into strips 1/2 inch wide.
Turn each of the strips onto its side, and trim if they measure wider than 1/2 inch, so that you have sweet potato sticks measuring 1/2 inch on the thickness and width of the potato.
Toss the sweet potato sticks in a bowl with the olive oil, salt and dried rosemary.
Lay the potatoes in a single layer on a baking sheet, and bake at 450 degrees Fahrenheit for 20 to 30 minutes or until golden brown and the potatoes have completed cooked through. Serve warm or allow to cool slightly.
