Carrot, Raisin, and Apple Salad


Carrot, raisin and apple salad is a popular side dish because of its sweet flavor and crunchy texture. It is high in nutrition and fiber. This recipe is for a basic version of this combination salad. You can also add 1/4 cup of pineapple tidbits and 1/4 cup of pecan or walnut pieces for a more complex salad.

Step 1

Pour 2 cups of boiling water over the raisins in a small bowl. Set them aside to steep for 10 to 15 minutes. Drain and chill.

Step 2

Core and dice the apple. You can leave the skin on, or peel it as you prefer. Toss the diced apple with 1 tsp. of lemon juice in a large bowl.

Step 3

Grate the carrots. Add the carrots and raisins to the diced apple.

Step 4

Mix 1/4 cup of mayonnaise and 1/4 cup of sour cream. Add to the apple mixture and toss to coat thoroughly. Cover with plastic wrap and chill for 2 hours or until serving time.

Step 5

Serve on lettuce leaves. Garnish with a few pecans or walnuts and pineapple tidbits, if desired.
