Basic Curry:
3 tbsp olive oil
1 pound chopped onions
4 garlic cloves
1 tsp ground cumin seeds
1 tsp ground coriander seeds
1 tsp chili powder
1 tbsp chopped ginger root
3 c diced tomatoes
1 tsp salt
1 tsp sugar
2 tsp garam marsala

1/3 c plain yogurt
1 tsp turmeric

Cook onions in the oil in a large pot until they caramelize, about 30 to 45 minutes. Toast the spices (except Garam Marsala) 2-3 minutes in a dry pan on med/low heat. Grind the spices into a powder. Add the garlic, coriander, cumin, hot chili powder and salt. Stir into the onions. The longer you take to cook it the better the curry will be, so take your time. Add ginger and cook 4-5 minutes. Then add the tomatoes, and the sugar if you desire, and stir well. Finally add the garam marsala. At this point you can enjoy this sauce the way it is, or for another variety you can add yogurt or turmeric. If turmeric is added the curry should be returned to the heat for an additional 10-20 minutes. Serve with your favorite rice or vegetables and enjoy!
