A perfect accompaniment to grilled chicken or pork, bursting with flavour, and best of all low in calories and fat.
2 cups (500 mL) unpeeled, pitted, chopped ONTARIO PEACHES
2 cups (500 mL) unpeeled, cored, chopped ONTARIO PEARS
1 red pepper, seeded, finely chopped
1/3 cup (75 mL) finely chopped red onion
1/4 cup (50 mL) coarsely chopped coriander
1 jalapeño pepper, seeded, finely chopped
3 tbsp (45 mL) freshly squeezed lime juice
1 tsp (5 mL) brown sugar
1/2 tsp (2 mL) oregano
Salt and freshly ground black pepper to taste
Stir all ingredients together in a large bowl. Toss gently to mix. Let flavours blend for at least 1 hour before serving.
Store unused salsa in the refrigerator, covered, for up to 2 days.
Makes 5 cups (1.25 L).
