Grilled Pepper and Black Olive Relish
Yields: About 2 cups
1/4 cup pitted black olives, chopped
1/4 cup grilled red bell peppers, peeled, seeded and diced
1/4 cup grilled yellow peppers, peeled, seeded and diced
2 tablespoons crushed red pepper flakes
1 tablespoon fresh garlic, chopped
2 tablespoons fresh thyme, chopped
1/4 cup fresh parsley, chopped
2 tablespoons sherry vinegar or use 1 tablespoon of cider vinegar and 1
tablespoon of sherry
1 tablespoon honey
3 tablespoons olive oil
Salt and freshly ground pepper to taste
In a mixing bowl combine all ingredients and season to taste with salt and freshly ground pepper. Serve with grilled chicken or fish.
