Fresh Peach Walnut Chutney

This delicious condiment combines the soft crunch of walnuts with fresh peaches in a sweet yet tangy base.

Yield: Approximately 2-1/2 cups

1/3 c. Brown sugar, packed
1/3 c. Cider vinegar
1 tsp. Mustard seeds
1 tsp. Curry powder
¼ tsp. Salt
1/8 to ¼ tsp. Red pepper flakes
2/3 c. Diced green bell pepper
2/3 c. Diced onion
1-1/4 lb. Fresh ripe peaches
½ c. Coarsely chopped California Walnuts

Procedures:
In two quarter sauce pan combine sugar, vinegar, mustard seeds, curry powder, salt and red pepper flakes. Bring to boiling, stirring to dissolve sugar. Simmer three minutes. Add bell peppers and onions; simmer three minutes. Meanwhile pit peaches and cut into ¾ inch dice. Cool vinegar mixture slightly. Mix in peaches and walnuts. Cover and chill. Excellent with grilled chicken or ham.
