1-1/2 cups seedless raisins
1-1/2 cups dates, chopped
2 cups sugar
5 tbs. shortening
2 cups boiling water
3 cups flour
1 tsp. baking soda
2 tsp. cinnamon
1 tsp. ground cloves
1 tsp. salt
1 cup nuts, chopped
Preheat the oven to 325 degrees. Grease two 9x5 inch loaf pans.
Combine the raisins, dates, sugar, shortening and water. Simmer for 20 minutes or until the fruit is soft. Cool.
Sift the flour, baking soda, cinnamon, cloves and salt together. Add the flour mixture to the raisin mixture. Stir in the nuts. Pour into the pans.
Bake for 1-1.4 hours. Cool in the pans for 10 minutes and then turn out onto wire racks to cool completely.
Makes 2 loaves.
NOTE: You may use dried apricots, figs or currants in place of the raisins and dates. You may also add a cup of citron or candied fruits.
