Golden Whole Wheat Muffins

12 muffins

1/3 cup butter or margarine
1/4 cup packed brown sugar
2 eggs
1-1/4 cups all-purpose flour
3/4 cup whole wheat flour
1 tablespoon baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon baking soda
1/4 teaspoon salt
1/8 teaspoon ground ginger
1 cup plain yogurt
2 cups cored and finely chopped Golden Delicious apples


  1. Cream butter and brown sugar until light and fluffy. Beat in eggs one at a time. Combine flours, baking powder, soda, salt and spices. Add dry ingredients and yogurt alternately to creamed mixture. Fold in chopped apples. Spoon batter into 12 muffin cups; muffin cups will be full. Bake at 425 degrees F. 20-22 minutes or until wooden pick inserted near center comes out clean.
